Marry Me Chicken Preparation:
- Boil the pasta as per the directions given in the packet. Drain the pasta and keep some pasta water aside for later use.
- In a mixing bowl, add dried basil, dried oregano, garlic powder, onion powder, dried thyme, red pepper flakes, and black pepper powder Mix them all well.
- Take two freshly cleaned, large chicken breasts. Season the chicken piece with half of the seasoning mix, and rub on both sides well.
- Over a large skillet, sear the seasoned chicken over medium heat. Cook each side for about 6 minutes on both sides. Once seared, remove it from the pan and set it aside.
- In the same skillet, melt butter over medium heat. Add minced garlic and chopped sun-dried tomato. Fry for a few seconds on a low flame. Now deglaze the pan with chicken stock while scraping the bottom for any browned bits. Add the parmesan cheese and creme fraiche. Combine well and simmer for about 5 minutes until the cheese is melted thoroughly.
- To this prepared sauce, add the remaining seasoning mix. Place the seared chicken in the middle, and simmer again for about 8–10 minutes. Carefully remove the chicken pieces and slice them. To the sauce, add the cooked pasta, and mix thoroughly. Add pasta water if required to meet the desired sauce consistency. Place the sliced chicken breasts on top of the pasta. Garnish with some fresh basil and shredded parmesan cheese.
