  • 1 clove garlic roughly chopped
  • 2 Tablespoon red wine
  • ½ teaspoon granulated sugar
  • ½ teaspoon chicken stock powder

Simmer for a while until it reduces to half. 3. Add sugar, salt and chicken stock powder, cook for 2 minutes and blend to form a smooth puree. 4. Beat the egg yolk with cream and egg white separately, later mix them and smear some butter into a pan and pour the egg mixture. 5. Directions

To make sauce
Make a 'X' mark on the tomatoes. Place in a bowl, pour hot boiling water on the tomatoes. Cover the lid and leave for 15 seconds or until the skin of the tomato peels back.
Remove the tomato from the hot water and peel the skin of tomatoes, cut it into 4 quarters.

Adding Flavour to sauce
In a saucepan drizzle in the oil, heat the oil until it is hot, add chopped garlic clove and cook until they turn golden brown.
Once garlic gains color, add the boiled tomatoes and cook for about 2 minutes. Then add 2 tbsp of red wine and simmer the mixture for about 5 minutes (reduces by half).

Season the sauce.
Now season with ½ tsp sugar, ½ chicken stock powder, and a pinch of salt. Simmer for 2 minutes, turn off the flame. Blend the mixture smooth using a blender or hand mixer.
Then strain it. Add the blended sauce to a pan, mount 1 tbsp of unsalted butter into it. Keep stirring the sauce until the butter melts completely. You can keep the sauce on low heat to keep it warm until the omelette is prepared.

To make Omelette
In a bowl, break the eggs, separate egg white and yolk. In a mixing bowl, beat the egg white to a stiff peak but do not over whip it.

Preparing Omelette mix
In another bowl, whisk together egg yolks, salt and ½ tbsp heavy cream. Add this over the top of the prepared meringue, gently fold egg yolks into the whites until no large pieces of white are visible.

Making Omelette
In a heated pan, add butter/oil. Pour the omelette into the pan, pile it high. Carefully round the omelette, flatten it around 1 inch thick.
Cover the pan and cook for 3 minutes in medium low flame or until the bottom is golden brown.

Gently fold over the Soufflé Omelette in half on a plate. Serve the Soufflé Omelette with prepared tomato sauce along with parsley, sprinkle some salt and pepper.

Notes

While making meringue do not over mix it as it will make the omelette deflate and super flat.
As the eggs are slightly undercooked in this recipe, it is not recommended for children and elderly.
