Directions

Cook the vegetables
In a pressure cooker add 1 tbsp oil, once the oil gets heated add 1/2 tsp cumin seeds. Lets them splutter. Add 1 cup of Potato, and keep the flame on medium. Shallow fry it, then add 1/2 cup Carrots, 1/4 cup Beetroot, and 1 cup peas. Shallow fry for 2-3 minutes maximum.
Now add 1/4 cup of Tomatoes, and salt as per taste. Mix well, 1 tbsp red chili powder is added, and fry for 5 minutes the vegetables again. 2 cups of water is added for cooking the vegetables, and give the pressure for 3 whistles.

Preparation of Bhaji
Take a tawa (or Kadhai), Add 2 tbsp oil, 2 tbsp butter, and 1 tsp cumin seeds. Instantly add chopped onions, keep the gas flame high, and slightly fry the onion until its rawness vanishes. Add chopped Capsicum, keep stirring continuously the onion and capsicum, add ginger garlic paste, red chili paste, and a few drops of water, and keep mixing until it leaves oil. Now add the remaining chopped tomato, and salt. Continue stirring for 2-3 minutes. The boiled vegetables is added at this stage to the tawa, and mixed well. Add the spices, 1 tbsp red chili powder, turmeric powder, coriander powder, cumin powder, kasuri methi, and 3 tbsp Pav Bhaji masala. Mix well with the vegetables.
Turn the flame o medium heat, with a help of a masher, and mash the contents on the tawa very finely until it looks like a thick puree. Now add 1/2 cup water, and mix well. Cook for 3-5 minutes. Add a few cubes of butter and freshly cut coriander leaves. Bhaji is ready, transfer the prepared bhaji to a bowl.

Preparing Pav Bhaji
In the same tawa, add little butter, 1/2 tsp Pav Bhaji masala, prepared bhaji, and 1 sprig of coriander leaves. Mix well and place the pav after slicing the pav in the middle of the mixture.
Flip the pav and fry on both sides. Pav Bhaji is ready, serve the pav bhaji with chopped onions, lemon wedge, and garnish with butter and coriander leaves.

Notes

Instead of ginger garlic paste, only freshly prepared garlic paste can be used.
Vegetables of your choice can be added
