1 kg Rice
¾ Kg Mutton
3 medium size onion
3 medium size tomato
1 carrot thinly sliced
¼ cup oil
1 tsp garam masala
1 ½ tbsp ginger garlic paste
4 tsp Salt
1 tbsp sugar
7-8 cups Water
Raisins
Almond
Cashews
2 Cardamom
8 black pepper
1 inch cinnamon
1 tsp cumin

Directions

Preparation of Rice
Wash the rice grains thoroughly with enough water. Let the rice be soaked for about thirty minutes.

Preparation of ground masala
In a mixer or mortar, add 2 Cardamom, 8 black pepper, 1 inch cinnamon, 1 tsp cumin, and grind to get a coarse masala.

Preparation of Meat
In a large cauldron, add mutton with ginger garlic paste, 2 tbsp salt and 2 ½ cup water. Boil well until the mutton becomes tender and excess water dries up.

Making of Pulao
In a large pan, heat ¼ cup oil, add chopped onion, fry until golden brown, add chopped tomatoes, cook well. Add the cooked mutton, fry for 8 minutes. Now add 3-4 cups of water, 1 ½ tsp salt, and soaked rice. Keep the flame high, when the water dries up half in quantity, add coarsely grinded powder, cover the lid and leave on Dum for 20 minutes.
In another pan, heat 2 tbsp oil, once heated add raisins, cashews, almond, remove them. To the same oil, add 1 tsp sugar, caramelize it, add carrot and mix them. After 20 minutes, remove the lid of the pan, put the roasted nuts and caramelized carrot on top of it for garnish. Peshawar Kabuli Pulao is ready to serve hot.

Instead of Mutton, chicken can be used to prepare Kabuli Pulao.
