Recipe Ingredients:

  • ½ cup semolina
  • 4 tbsp ghee
  • 1 ripe mango
  • 2 cup milk
  • ½ tsp cardamom powder
  • Sugar
  • 1 tsp kewra
  • 3 tbsp Chopped pistachios
  • 3 tbsp Tutti Frutti

Recipe Instructions: 1. First puree the ripe mango, to this pureed mango add milk and mix well. 2. In a pan, heat ghee, add semolina, mango-milk mixture, cardamom powder, and sugar. Mix well. 3. Turn off the flame and add kewra water. 4. Allow the mixture to cool and later transfer to a greased plate. 5. Wrap the cooled mixture around the skewers, top with tutti Frutti and pistachios. 6. Refrigerate for an hour and serve immediately.

Directions

Making mango puree
Take a ripe mango, peel the skin, deseed and make a puree out of it using a blender or mixer.
Now blend the milk and mango puree together, keep aside.

Preparing the mixture
In a pan, add 3 tbsp ghee, roast the semolina till it becomes fragrant. To this add mango-milk puree, mix well, later add cardamom powder, sugar.
keep stirring the contents until it begins to thicken, that is it starts to leave the sides of the container. Off the flame, add kewra water.

Making kebab
Transfer the mixture to a greased plate. Let it cool, now take a skewer, wrap the prepared mixture along the length of the skewer, sprinkle the chopped tutti Frutti and pistachios.
Press gently to allow them to stick well. Repeat the same with the remaining mixture. Refrigerate for 1 hour and serve this delicious mango seekh kebab.

Notes

For a vegan recipe, use almond milk, cashew butter .instead of milk and ghee.
Use remaining ghee in the ingredient list to grease the plate
