Recipe Ingredients:

  • 1 kg Chicken
  • 2 tbsp red chilli powder
  • 1-1.5 tbsp yellow chilli powder
  • 2 tsp cumin powder
  • 2.5 tsp coriander powder
  • 2 tsp garam masala
  • 6 tbsp ginger garlic paste
  • 2 tbsp green chilli paste
  • ¼ tsp turmeric powder
  • A pinch chat masala
  • A pinch kasuri methi vishesh
  • Handful of chopped Coriander leaves
  • 1 tsp lemon juice
  • 10 tbsp oil
  • Salt as required
  • 8-9 tomato (medium size)
  • 2 onion medium chopped
  • 2-3 green chillies slit
  • ½ cup curd
  • 4-5 tbsp fresh cream

Recipe Instructions: 1. Clean the chicken. In a mixing bowl, add chicken, spices, lemon juice and ginger garlic chilli paste. Rest the marinade for some time after mixing well. 2. Cook the chicken in oil on a skillet around 75% 3. Next, prepare the gravy in a large kadai, using onions, tomato puree, spices, salt and add hot water. Let it cool for 25 minutes. 4. Finally to make Chicken Changezi, in a tawa add oil, prepared gravy, chicken curd, and fresh cream. Let the chicken cook completely and the gravy becomes dark in colour. Tasty flavourful chicken Changezi is ready to eat.

The recipe from then has evolved greatly and is loved by many chicken lovers in the region. It is sold as hot cakes in whichever dhaba, gully, or restaurant the dish is prepared in Delhi. Traditionally the chicken is roasted on a rotisserie, gravy is prepared using the spices and then the recipe is finished on a skillet(tawa).

In the rotisserie machine, a whole chicken is added, it keeps rotating and there is a flame underneath to roast the chicken. Now people cook the chicken in a tawa or in the oven as per convenience.

2tbsp red chilli powder
1-1.5tbsp yellow chilli powder
2tsp cumin powder
2.5 tsp coriander powder
2tsp garam masala
6 tbsp ginger garlic paste
2tbsp green chilli paste
¼tsp turmeric powder
A pinch chat masala
A pinch kasuri methi vishesh
Handful of chopped Coriander leaves
1tsp lemon juice
10tbsp oil

8-9 tomato (medium size)
2 onion medium chopped
2-3 green chillies slit
½ cup curd
4-5 tbsp fresh cream

Directions

Marinate the Chicken
Take 1 Kg of chicken in a bowl. Make shallow cuts on the chicken pieces, add salt as per taste, 1 tbsp chili powder, 1 tsp cumin powder, 1 tsp coriander powder, ½ tsp garam masala, 2 tsp ginger garlic paste, 1 tbsp green chili paste, 1 tsp lemon juice.
Mix the ingredients well and allow them to marinate nicely. If you wish you can marinate it overnight or cook the chicken directly also.

Cook the Chicken
Heat a pan, once the pan is hot, add 2 tbsp oil, and heat it. Now spread chicken pieces on it, cook over high flame for 2-3 minutes on one side then flip it. Cover the lid and cook over medium flame for 10-12 minutes.
Transfer the chicken into a bowl once it gets cooked at 75%. Pour all the chicken juice and fat remaining in the pan over the chicken into the same bowl. The chicken for chicken Changezi is ready.

Prepare the gravy
Blanch the tomatoes to make a puree. For that make a cross cut on top of the tomatoes, add them to the boiling water, and boil for 10 minutes.
Once boiled, strain using a strainer and transfer to a bowl. Allow the tomatoes to cool down, later transfer them to the mixer grinder and grind them into a coarse puree.

Preparing the base gravy
In a handi or large kadhai, add 2-3 tbsp of oil, and heat the oil. Into it add chopped 2 medium-sized onions, and cook them over medium flame till they are golden brown. Add 4-5 tbsp Ginger garlic chili paste, once they are cooked well, lower the flame and add 1/4 tsp turmeric powder,1 tbsp red chili powder, 1.5 tbsp coriander powder, 1 tbsp cumin powder, 1⁄2 tbsp garam masala, salt as per taste and add hot water immediately, so that the spices won't burn.
Stir well and cook the spices for 3-4 minutes until the oil separates. Add tomato puree and extra salt if required. Stir well and cook for 20-25 minutes covering the lid. In between regular intervals lift the lid and stir the gravy. The base gravy is ready.

Setting chicken Changezi
Finally to make chicken Changezi, set a tawa over a high flame and once it gets hot, add 4-5 tbsp of oil and heat nicely. Add the prepared gravy, 1/2 Cup whisked curd, 4-5 tbsp fresh cream, 1 tsp garam masala, 1.5 tbsp yellow chili powder, and salt according to taste. Stir well and cook over high flame for 20-25 minutes. Keep stirring till the gravy becomes dark. Now add cooked chicken, 2-3 slit green chili, a pinch of chaat masala, and crushed kasuri methi, and mix well.
Cook for 10 minutes on low flame until the chicken gets cooked completely, the chicken and masala should be infused well. Garnish with fresh coriander, slit green chili, and julienned ginger. Serve with tandoori roti or butter naan or jeera rice.

Notes

Both bone in and boneless chicken can be used to prepare Chicken Changezi.
Instead of a skillet or pan, chicken can be cooked in Oven also. Cook chicken around 200°C until the chicken is 80% done or until it starts getting slightly caramelised on top.
Instead of regular red chilli powder try using Kashmiri red chili powder.
